DESCRIPTION:MWL MEMBER EXCLUSIVE TASTINGS:\nFREELAND SPIRITS\nYou might be wondering: how did the granddaughter of a teetotaler come to name a distillery after her? It all comes back to their shared love of the land. In fact\, Jill’s favorite childhood memories were running wild in Meemaw’s garden\, playing in the dirt and helping her shell peas on the porch. \nThat’s when agriculture first became her passion—in the years that followed\, Jill helped plant community gardens in Guatemala\, worked on a farm in Port Angeles\, then moved to Portland to run a nonprofit farm. It was fulfilling work\, but Jill was eager to build something of her own. Something that connected to agriculture—and her love of whiskey. (See where we’re going with this?) \nOne fateful evening in 2016\, Jill was throwing back whiskey with her good friend Cory Carman\, who raises grass-fed beef in Eastern Oregon. When Jill shared her dream of starting a distillery\, her friend confided that she’d always wanted to produce grain on the ranch. If you make it\, I’ll grow it\, Cory said. Run by husband-and-wife team Diego and McKenna Palacios\, Machetes is best known for its massive oblong quesadillas made with heirloom corn masa — their tie-dye appearance is reminiscent of a summer camp T-shirt. McKenna usually leads the masa shaping process before handing the uncooked tortillas to Diego to fill and grill. \n  \nThe duo are both industry vets\, with Diego currently presiding at OK Omens and McKenna at Indonesian restaurant Gado Gado. In the centuries that followed\, the Distillery changed hands numerous times\, but one thing always remained constant; it was a homeplace for the creation of authentic American whiskey. \n  \nAt the turn of the millennium\, the Distillery was amid a period of transformation once again and looked to its forebearers for inspiration. As a trailblazer in the industry\, the distillation team chose to pay homage to W.L. DESCRIPTION:MWL MEMBER EXCLUSIVE TASTINGS:\nMEZCAL AND RUM\nABOUT NETA \nNETA exclusively commercializes single-batch agave spirits from producers in Miahuatlán and almost entirely from the 110-person village of Logoche. When talking about “single batches” we are referring to lots produced from a single oven or harvest of agave. The process of crafting these batches begins with the harvest of mature en guía or capón plants\, often of various species or types of agave around the time of the full moon\, that are then cooked together in a conical earthen pit. The roasted agave hearts or piñas are then either separated and designated for multiple smaller batches\, or macerated and fermented together in their entirety to make a single batch. In accordance with traditional practices\, the spirits produced from different ovens are not blended\, homogenized\, or standardized to a particular ABV. Each production is unique and bottled at still-strength by members and family members of the co-op and the quantity produced is relative to the number of agave cooked in an oven and their respective yield. \nABOUT ALAMBIQUE SERRANO \nBrothers Isidoro\, Rommel\, William\, and Axel Krassel Peralta continue the work that their grandfather Max started in the 1930s. An immigrant who fled his home country of Germany at the start of WWI\, 16-year-old Max landed on the Gulf coast of Veracruz in 1917. \nWith no knowledge of Spanish\, Max began working any odd job that he could find. He eventually found himself in the mountainous Cañada region of Oaxaca\, where he met and married his wife. It wasn’t long before he began distilling aguardiente on a coffee farm (at that time it was common for the haciendas to distill their own cane). After learning the ropes\, Max set out on his own to begin distilling his own aguardiente\, using a still he designed and built himself. \nABOUT ISAUTIER \nDuring the reign of King Louis Philippe 1st of France\, Louis and Charles Isautier set out from mainland France and sailed across the oceans to move to Réunion Island. Fascinated by the island and its wealth of sugar cane\, they founded the family business in 1845.
