DESCRIPTION:We are thrilled to announce the next installment of our Kitchen Takeover series\, welcoming Chef Diego Palacios\, co-founder & owner of local pop-up Machetes. \n  \nThe Mexico City street-style food pop first began in the summer of 2023\, with a string of pop ups selling out all across the city. Run by husband-and-wife team Diego and McKenna Palacios\, Machetes is best known for its massive oblong quesadillas made with heirloom corn masa — their tie-dye appearance is reminiscent of a summer camp T-shirt. McKenna usually leads the masa shaping process before handing the uncooked tortillas to Diego to fill and grill. \n  \nThe duo are both industry vets\, with Diego currently presiding at OK Omens and McKenna at Indonesian restaurant Gado Gado. In October 2024 Machetes began their residency at OK Omens\, serving up antojitos\, ceviche\, handmade Choco Tacos\, and more every Sunday and Monday through the winter. MWL is honored to share their cuisine with you\, curating beverage pairings for each course.  \n  \nPlease note all food and beverages are pre-fixe\, we politely decline substitutions or alterations to the menu. In the centuries that followed\, the Distillery changed hands numerous times\, but one thing always remained constant; it was a homeplace for the creation of authentic American whiskey. \n  \nAt the turn of the millennium\, the Distillery was amid a period of transformation once again and looked to its forebearers for inspiration. As a trailblazer in the industry\, the distillation team chose to pay homage to W.L. Weller by setting aside some of the first whiskeys distilled in the new millennium for the sole purpose of creating this extraordinary innovation. \n  \nA blend of vintage straight bourbon and wheat whiskeys distilled in 2000\, 2003\, 2005 and 2006\, Weller Millennium highlights the impact that wheat has on the whiskey’s flavor: the softness imparted by the wheat creates a smoother\, sweeter\, more approachable expression. By marrying these exceptional spirits together\, the whiskeys further harmonize with each other\, creating a cohesive\, balanced final product that is greater than the sum of its parts. \n  \nThis rare Bourbon will be accompanied by four additional pours from Weller: CYPB\, 12 year\, Antique 107\, and Full Proof. MWL Executive Chef Bill Wallender will be curating a pre-fixe\, multi-course dinner to pair with the flight. Mayville’s decades of blending expertise and deep storytelling will illuminate the legacy of Buffalo Trace and the remarkable character of this limited release collection. \n  \nCrafted in tribute to the resilience of whiskey during the Prohibition era\, only three sets of the Prohibition Collection were allocated to the state of Oregon. This will be the only opportunity to taste the collection at MWL\, as every last drop will be served at the event.  \n  \nTo mark the occasion\, we will be offering half pours of Weller Millennium at break even pricing ($225 for .75oz). For one night only\, you’ll be able to sip one of the most artistically blended whiskies to be released by Sazerac with the very person who blended it.
