Ancestro Kitchen Takeover

We are thrilled to announce the next installment of our Kitchen Takeover series, welcoming Chefs Leticia and Marco Escamilla, co-founders & owners of local pop-up Ancestro.
Hailing from the kitchens of República and its sister restaurants, Lilia and De Noche, Leticia and Marco first popped up as Ancestro at Cadejo Coffee in the Fall of 2024. Serving dishes inspired by their Mexican ancestors, the menu featured mole tamales stuffed with chicken, chilaquiles, and mini memelas (a Oaxacan dish reminiscent of sopes). “The mole was excellent, smooth and complex…like all the food…it was simple, elegant and well made” as mentioned by The Oregonian.

Salsa macha mussels
Salsa macha butter emulsion, pickled carrot, toasted homemade bread

Enfrijolada
White bean, requeson, snap peas, totomoxtle.
4TH course
Pipian verde
Short rib, shaved asparagus, fava puree, pickled rhubarb
5TH course
Tamal de fresa
Strawberry, cream cheese foam, strawberry powder
