The Pacific Northwest is home to a myriad of lush flora and verdant terrain, much of which is cultivated, harvested, and prepared for the region’s thriving restaurants and bars. Beyond the farms, however, and deep into the forests, mountains, and coast the terroir continues to support a wide variety of delicious and highly sought-after ingredients: the wild and foraged.

The Multnomah Whisk{e}y Library’s Head Chef Ben Grossmann brings us another in his series of pairing dinners, highlighting Pacific Northwest delicacies that have been hunted, fished, and gathered for generations.

“The West of which I speak is but another name for the Wild, and what I have been preparing to say is, that in Wildness is the preservation of the World.” –Henry David Thoreau
