Flying Fish Pairing Dinner

We are pleased to announce The Multnomah Whiskey Library has partnered with Flying Fish to introduce our very first collaborative pairing dinner. Join us for a unique and refreshing dining experience, designed by Flying Fish’s executive chef, Erik Englund. MWL alumni and Flying Fish bar manager, Ross Richardson, will lead the event, collaborating with MWL experts Kyle Sanders and Cody Mulcahy to select exciting spirit pairings for each course.
Course 1
Ono, Aqua Chile, Pickled Buddah’s Hand, Wasabi
Oyster: Mr. Bill’s, Spirit Based Mignonette, Scallion Curls, Cilantro Oil, Marigold Flowers and Leaves
Pairing: Specialized Cocktail
Course 2
Opah and Local Squash Carpaccio
Sustainable Caviar, Papadam, Pickles, Crema, Beet Cured Egg Yolks, Herbs
Oyster: Tide Point Blue Pool, Squash Fluid Gel, Crispy Shallot, Herbs
Pairing: Ohishi 10 Year Brandy Cask
Course 3
Butter Clams with Chaing Mai Sausage
Water Buffalo Sausage, Lime Leaf, Lemongrass, Cilantro, Fresh Pasta
Oyster: East Cape, Coconut-Pandan Foam, Lime Leaf Powder, Cilantro Oil
Pairing: Compass Box Story of the Spaniard
Course 4
Sablefish Massaman Curry
Warming Spices, Sticky Rice, Local Root Vegetables
Oyster: Sumo Kumo Coal Kissed Oyster, Curried Roe, Herbs
Pairing: Leading 18 Year
Course 5
Uni Custard Donut with Dulce Sugar
Oyster: Kusshi, Tepache Ice, Toasted Coconut, Dulce
Pairing: Glendronnach 18 Year
Menu subject to change. Wine pairing alternatives provided upon request. Substitutions and alterations to the food menu are politely declined. Vaccinations required at check in.
