We are very excited to have our Sous Chef, Marcus Hilliker, showcase a stunning tasting experience using his knowledge and passion for Japanese culinary tradition and technique. Chef Marcus’ focus for this dinner is to illustrate the beautiful parallels between Japanese and Pacific Northwest cuisine. The dinner will feature local pork and beef raised using Japanese technique and tradition, and, of course, all the delicious bounty of the Pacific Ocean. Chef Marcus’ creations will be paired with a carefully curated selection of Japanese spirits to compliment and accentuate, including whiskey from Yamazaki and Nikka.
